Tinga is a very popular Mexican dish made of shredded chicken in a homemade chipotle sauce served on top of tostadas. You can add a variety of toppings or none at all, it is delicious all by itself!
Ingredients:
3-4 cups cooked and shredded chicken (you can cook your own or use rotisserie)
4-5 Roma tomatoes
1/2 Can chipotle peppers in adobo sauce (More or less to taste)
1 whole onion julienned
1/2 onion (for sauce)
1 garlic clove
Pinch Cumin
1 1/2 tablespoons chicken bouillon
2 1/2 cups water or chicken broth
Oil for frying
Toppings:
Mexican or Salvadorian Sour Cream
Refried Beans
Queso Fresco
Shredded Lettuce
Tostadas
Directions:
In large deep frying pan add oil, julienned onions and shredded chicken. Fry until onion is translucent and chicken begins to brown slightly. Set aside.
In small pot boil tomatoes until peel begins to separate and tomatoes are cooked.
In blender add tomatoes, 1/2 onion, garlic, cumin, bouillon, and half can of chipotle peppers with adobo. Add in 2 1/2 cups water or broth and puree until smooth.
Pour pureed mixture into chicken/onions and stir. Bring to a boil and stir. Turn down heat and simmer for 5-7 minutes. Remove from heat.
Serve on tostadas. You may top with your choice of cream, cheese, shredded lettuce, and refried beans. Enjoy!
